Three Gluten Free Recipes to Try This Bank Holiday Weekend!
Spring has arrived, ANOTHER Bank Holiday weekend is around the corner, and suddenly the urge to bake feels stronger than ever!!
Maybe it’s the longer days, maybe it’s the lighter flavours... or maybe it’s just the simple joy of baking something seasonal.
Either way, if you’re looking for springtime recipes that celebrate fresh flavours, we’ve put together three gluten free recipes perfect for the season!!
From classic carrot cake to a simple pastry bake, these recipes are ideal for weekend baking, or simply celebrating the brighter days ahead.

🥕 Gluten Free Carrot Cake (A Spring Classic)
Carrot cake and spring go hand in hand. Lightly spiced, beautifully moist and topped with cream cheese frosting, it’s a proper staple!
Ingredients
Cake:
- 250g of our Gluten Free Self-Raising Flour
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- 200g light brown sugar
- 150ml vegetable oil
- 3 large eggs
- 250g grated carrot
- 75g chopped walnuts (optional)
- 1 tsp vanilla extract
Cream Cheese Icing:
- 200g cream cheese
- 100g unsalted butter (softened)
- 250g icing sugar
- 1 tsp vanilla extract
Method

Preheat oven to 180°C (160°C fan) and line a cake tin.

Mix your flour, cinnamon and nutmeg in a bowl.

Separately whisk your sugar, oil and eggs until smooth.

Then stir in carrot, vanilla and walnuts to your mixture.

Fold the dry ingredients into the wet mixture. Fill your cake tin.

Bake for 35-40 minutes until a skewer comes out clean.

Beat your icing ingredients together and spread over the cooled cake.
- Decorate with extra walnuts, carrot shavings and the like!
🍓 Homemade Gluten Free Jam Tarts
Jam tarts are one of those classic British springtime recipes that never go out of style!
They’re simple, nostalgic and perfect for Easter baking with kids.
Ingredients
- 250g Gluten Free Sweet Shortcrust Pastry
- 150g strawberry or raspberry jam
Method

Preheat your oven to 180°C (160°C fan).

Roll out 250g of your pastry block and cut circles small enough to fit a muffin tray.

Press the circles into the tray and fill each with 1 tsp of jam.

Bake 15 minutes until golden!
🍋 Lemon & Blueberry Drizzle Cake
And finally, if there’s one flavour combination that truly captures spring, it’s lemon and berries.
This lemon and blueberry drizzle cake is fresh, bright and perfect with an afternoon cup of tea.
Ingredients
Cake-
- 200g of our Gluten Free Self-Raising Flour
- 200g butter
- 200g caster sugar
- 3 eggs
- Zest of 2 lemons
- 150g blueberries
Drizzle-
- Juice of 2 lemons
- 120g icing sugar
Method

Preheat your oven to 180°C and line a loaf tin.

Cream butter and sugar until light.

Beat in eggs to the mixture one at a time.

Fold in your flour, lemon zest and blueberries.

Bake for 45–50 minutes.

Mix lemon juice and icing sugar and pour over warm cake.
