Simon's Red Cabbage Coleslaw Recipe!

The Perfect Side For A Homity Pie!

If you've ever asked us what goes best with a Homity Pie, you're not alone.

We get asked it all the time!

The answer? Well, you could keep it simple with a salad, but if you ask our founder Simon, there's one side that wins every time:

Red Cabbage Coleslaw!!

The Homity Pie is one of our favourite summer bakes. It's lighter than a traditional pie, with no pastry lid, but still packed with all the comforting good stuff.

Potato. Cheese. Onion. Garlic. Proper hearty flavours!

Think of it as somewhere between a pie and a quiche, but with a lot more comfort!

The trick is pairing it with something that cuts through that rich, cheesy filling. Something fresh, crunchy and just a little bit sharp.

That's where this red cabbage coleslaw shines!

Obviously you can buy it from the shop... but where's the fun in that?! We got out founder, Simon, to have a go at making his very own 'slaw...

Simon's Red Cabbage Coleslaw

Like most of Simon's recipes, this one doesn't involve scales, measuring jugs or any great precision.

"It's really not rocket science," as he'd put it...

You'll Need:

  •  Half a red cabbage, finely sliced
  •  1 apple, finely chopped
  •  A squeeze of lemon juice
  •  A handful of walnuts, lightly crushed
  •  A pinch of fennel seeds (optional)
  •  Natural yoghurt
  •  Mayonnaise or salad cream
  •  A pinch of salt
  •  A little sugar (optional)

Method:

  1. Finely slice the red cabbage and pop it into a large mixing bowl.
  2. Add the apple, lemon juice, crushed walnuts and fennel seeds.
  3. Next, add a generous spoonful of yoghurt, followed by mayonnaise or salad cream to loosen everything up.
  4. Mix well and give it a taste!
  5. If the lemon has made things a little sharp, add a tiny sprinkle of sugar to balance it out. Finish with a pinch of salt.
  6. Want it a little creamier? Add another spoonful of mayo. Adjust it until it tastes right to you!
  7. Once you're happy, pop it in the fridge for a while to let the flavours get to know each other.

By the time your Homity Pie comes out of the oven, it'll be ready to go!

Why It Works So Well

The Homity Pie is all about comforting flavours; potato, cheese, onion and garlic wrapped up in Chunk pastry! (And they come in both Original & Gluten Free form!)

The red cabbage slaw brings crunch, freshness and a little tang to the party, which helps balance every bite. It's one of those combinations that shouldn't work quite as well as it does!

But it really does.
