What Even Is Haggis?
Haggis is Scotland’s most iconic dish, lovingly referred to as the "chieftain o’ the pudding race" thanks to Robert Burns’ ode to it.
Traditionally made from sheep’s pluck (that’s heart, liver, and lungs for the uninitiated), oatmeal, suet, onions, and spices, haggis is like the scrappy underdog of cuisine 🐑 Proof that creativity and thrift can make magic in the kitchen!!
It’s all boiled up in a casing (once a sheep’s stomach, now usually artificial), and served with pride.
Haggis became synonymous with Burns Night because of Scotland's national poet, Robert Burns. His poem "Address to a Haggis" glorifies the dish as a symbol of Scottish pride, identity, and resourcefulness.
For centuries, Scots have celebrated Burns’ legacy by tucking into haggis alongside neeps and tatties (mashed turnips and potatoes, for the non-Scots among us) and raising a glass of whisky 🥃
